Mushroom Risotto Wild Food Farm
 1 cup Arborio rice
 1 cup Chopped mushrooms (approx)
 100 g Spinach, I used frozen in this recipe, but fresh is also great
 1 tbsp Wild Food Farm's Smokey BBQ Rub
 oil for frying
 3 cups Stock of your choice

Lightly fry the rice in a scant spoon of oil, just to cover it and slightly toast the rice
Add one cup of water or the stock you choose

Stirring the rice keep adding water as the rice absorbs it
Once the water is almost absorbed add the mushrooms and the spinach
Keep cooking and adding the liquid until the rice is cooked

Add the Wild Food Farm Smokey BBQ rub to taste
Add a bit and taste the rice, then more to taste, everyone is a bit different so work out what suits you.
