
Gently fry the onion till transparent in oil
Add the chopped celery, stir together and gently fry again
Add the stock, let it all cook together for a few minutes, then add the herbs
Add the can of canneloni beans
Let the soup cook for approx 10 min on gently simmer.
Dont over cook, you want the celery to maintain some colour and crunch
Soup is now ready to serve.....very quick and easy. The flavours are soft and gently and a great soup to start a meal or if you're feeling a bit "under the weather!!"
To serve the soup I added some coconut, dairy free yoghurt, some celery leaves for garnish and a touch of chilli, garlic, sesame oil. This is up to you, the soup is great on its own, but the yoghurt and garlic,sesame, chilli oil just gave it another flavour contradiction, which I quite like.
