Banana bread at it’s best, simply delicious

My Recipe

Yields: 12

Ingredients

  • 100g butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups of plain flour
  • 1 teaspoon of bi carb soda
  • 3 ripe bananas
  • 1/2 cup fresh riberries
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla

Method

  1. Heat oven to 175C
  2. Cream butter and sugar in a food processor
  3. Add mashed bananas and eggs then the vanilla
  4. Process until blended
  5. Stir in the banana mixture and riberries
  6. Pour into a greased loaf pan than has been lined with baking paper
  7. Bake for approx 60 minutes. Oven temperatures can vary, prick with a skewer and when it comes out clean it's cooked
  8. Store in a fridge.

Serving suggestions

Slice and spread with Wattleseed Espresso butter. This loaf is also pretty good when it's toasted, a great Sunday breakfast with a good coffee.
