Curry in a hurry….Outback Bush Beef Curry make at home or on the camp fire. A vegetarian option is to use your favourite vegetables plus chick peas or white beans.
Approx 2 dessertspoons of oil in pan, add the beef
When beef is browned add the onion, then the curry powder, cook together for approx 2 minutes
Add the carrots and celery to pan
Add beef stock and leave to cook for approx 30 min, this allows the flavours to mingle
Serve with rice, add a little natural yoghurt
You can add any vegetables that you like. For a Vegetarian option use vegetable stock and vegetables, add chick peas or white beans in place of the meat. When my mother made curries she often sliced banana and rolled in coconut and served as a side along with some tomato chutney. I'm a banana lover so for me it a great addition, but chopping apple and sprinkling with lemon juice is another option and it provides fruit as well as vegetables.
