Gosh, nearly at the end of February and here in Melbourne, after all the crazy weather we’ve had, a few amazing days to show just how good it can be.  Long evenings and sunny days.  I do find these days inspiring and love to seek out new ideas to cook.  So watch this space, I’m going to venture further, but still make it quick and easy, I think with regular day to day meals thats what we need, add a bit of healthy spirit into the mix plus keep it cost effective.  So that’s the plan, lets get things happening.  Let start with an easy one, Warrigal Greens, you can buy the seeds here online…once established they grow in abundance.  Use as you would spinach, in salads, soups, pasta dishes and quiches.  This really simple dish featured here is found in my recipes Warrigal Greens with soft boiled eggs on toast, a great early morning breakfast.

I mixed in a few other leaves that I had in the fridge as well, a good combo of greens from the bottom of the fridge that dont need to go to waste!
