Sausage Rolls

Sausage rolls are a great standby, not only for hungry kid, but a great finger food for guests. They can be frozen and served with my Tomato Relish make a real hit!

 2 cups Cabbage, finely chopped
 1 ½ cups Carrot, grated
 ½ cup Spring onions, finely chopped
 1 cup Breadcrumbs
 2 tbsp Worcestershire sauce
 250 g Kangaroo mince
 250 g Beef sausage mince
 1 tsp Native Pepper
 2 tbsp Tomato Paste
 5 Shortcurst pastry
 1 Egg for egg wash
 Sesame seeds, optional

Put all the ingredients, except for the pastry, egg and sesame seeds into a food processor and mix together.
I used my stick blender for this and it works well.

Once the mixture has come together, doesnt matter if it isnt completely smooth, a few bits of vegetable etc showing isnt a problem....just adds to the look.

Place one sheet of pastry on the bench and put a row of the meat mixture

Starting at the meaty end roll up

Brush with the slightly beaten egg and top with sesame seeds. Cut into sausage rolls, I cut the roll in half and then then half again, but you might want a smaller or larger size, up to you

Repeat the process with the other four pastry pieces.
You might want to divide your mixture into 5 before you start to ensure even distribution onto the pastry.

Place onto a baking tray lined with baking paper and cook for approx 50 minutes, until golden brown.
Oven temperature approx 190/200C, depending on oven and size of the sausage rolls.
