Place all ingredients into a bowl and mix together
You can put into the fridge for cooking later if wanted, this makes the mint flavour go thru the fritters perfectly
Put approx 1 desertspoon of coconut oil in a pan and heat
Place spoonfuls of the mixture into the pan and make sure that you piece together to create little fritters
When brown, flip over and cook the other side
Do in batches, I usually do 4 at a time in my pan. Then place on a plate.
Serve with crust bread and green salad.
