Banana bread at it’s best, simply delicious
Heat oven to 175C
Cream butter and sugar in a food processor
Add mashed bananas and eggs then the vanilla
Process until blended
Sift the plain flour, bi-carb soda and salt together
Gently stir the banana mixture and riberries into the dry ingredients
Pour into a greased loaf pan than has been lined with baking paper
Bake for approx 60 minutes. Oven temperatures can vary, prick with a skewer and when it comes out clean it's cooked
Store in a fridge.
