Old Man Saltbush, dried and ground
Known as Old Man Saltbush this bush grows in the hot dry areas of Australia. When the early Europeans cleared the land it caused the water table to rise. Where water tables are within 2 metres of the surface moisture will rise and evaporate, this concentrates the salt on the land surface. This has caused a lot of damage to native vegetation. Saltbush stops this by using moisture down deeper in the soil which in turns prevents the upward movement of moisture to the surface. Saltbush is also used as animal fodder and many claim that lamb raised on saltbush has a wonderful flavour and tender meat.
