Wattleseed


Wattleseed has been used by Aboriginal people for thousands of years. They would eat it either fresh or roasted in an open fire then ground on stones (motor and pestle). They could then mix it with other plant juices or resins and make it into a damper and cook or roll into balls and dry, preserving it for future use. The wattleseed sold by Outback Chef is roasted and ground ready to use to make the most of it's wonderful coffee/chocolaty flavour. Before using in cooking briefly toss the seeds in a warm pan to release the flavoursome oils or else infuse in boiling liquids, which also makes the grinds softer. Just add to your favourite muffin or bread mix, ice-cream or custard.
