Wattleseed


Wattleseed has been used by Aboriginal people for thousands of years. Eaten either fresh or roasted in an open fire, it was then ground to a powder on stones (motor and pestle). The ground wattleseed could then be mixed with plant juices or resins to make it into a damper and cook. It was also rolled into balls and dried, preserving it for future use. The wattleseed sold by Outback Chef is roasted and ground ready to use to make the most of it's wonderful coffee/chocolaty flavour. Before using in cooking briefly toss the seeds in a warm pan to release the flavoursome oils or else infuse in boiling liquids, which also makes the grinds softer.
