Add Bush Tomatoes whenever you cook with traditional tomatoes for a bushtucker taste, for example sauces, soups, salsas chutneys...the list of food is endless. In the tins the Bush Tomatoes are dried and ground ready for you to cook with and in the bags they are still whole. Bush tomatoes are still gathered by the desert women by hand when they have dried on the bush. They resemble dried raisins and are quite hard. The women grind them down to a coarse powder. Drying the fruit is essential as it cuts back the level of alkaloids in the fruit as well as concentrating the flavour. Don_t eat them from fresh. Bush tomatoes are a good source of carbohydrates and Vitamin C and to cook with are very spicy, sometimes, especially if used too much can be a little bitter, sweeten if that happens.
