This dish is so easy to make and tastes and looks great, just the thing to impress your guests with your bushfood knowledge.
RECIPE
INGREDIANTS
3 ripe fresh tomatoes
1 onion
garlic
2 dessertspoons of ground Bush Tomato (these come ground in the tins, or you can grind yourself in a food processor)
Mountain pepper to taste
Murray River Salt to taste
METHOD
Into frying pan brown onion with some olive oil, add garlic, fresh tomato's...cook until tomato mixture is soft, add bush tomato's these will thicken the sauce, add Mountain pepper and Murray river salt to taste.
Arrange on plate with eggplant and some crumbled fetta cheese and lettuce or else could be used as a tomato dip or with pasta
to cook eggplant....slice into pieces, cover with salt and leave for about 15 mintues, wash.
dip in a beaten egg and fry in pan until crisp and brown
